As with other Chtaura cheeses, the Haloumi Ball Knots are made by hand with meticulous attention to the smallest of details. The milk used to make this authentic cheese comes from sheep raised on organic cotton fields in southern Lebanon. Cured cheese is matured for months before being hand shaped to ensure that it melts evenly and has the right flavour and firmness for consumers. Halloumi is moderately high in fat and a good source of protein. It's rich in calcium and is also a source of zinc, magnesium, vitamin A, and B vitamins. Traditionally prepared on the Eastern Mediterranean island of Cyprus, Halloumi is a white, layered cheese, similar to mozzarella. It is a semi hard, unripened, and brined cheese with a slightly spongy texture. Its flavour is tangy and salty, and it has no rind.
